An Easter Egg in a video game refers to a message, graphic, piece of music, area, NPC or something else of that nature which is hidden in-game by the designers and needs to be hunted and found by the player. This "hunt" for the "extra goodies" is called an "Easter Egg" after the idea of a traditional "Easter Egg Hunt" observed by many western countries.
